MCLEAN, Va.--(BUSINESS WIRE)--How does miso-brushed cod with sautéed spinach sound? According to a group of seniors, it’s a winning recipe. Chef Floyd Stephen, of Brighton Gardens of Dunwoody, GA, a Sunrise Senior Living community, has been named this year’s Sunrise Signature Chef and champion of the second annual Senior Eats™ Nutritional Challenge. A judging panel of Sunrise residents chose Chef Stephen’s culinary creation for its tastiness and nutritional value.

“The resident judges were impressed by Chef Stephen’s flavorful dish, which also packed health benefits, as cod is an excellent source of protein and omega-3 fatty acids. All of our finalists did an incredible job creating meals that could rival our country’s top restaurant chefs,” said Tim Whelan, vice president, Dining Services for Sunrise. “We constantly look at ways to provide more variety for our residents to enjoy, and the Nutritional Challenge is a great way to add unique, healthful dishes to our menus,” he added.

The Senior Eats™ Nutritional Challenge invited chefs from Sunrise communities across the U.S. and Canada to develop healthy, creative and delicious recipes that incorporated Sunrise’s high standards for senior nutrition. The competition was held at The Fairfax, a Sunrise Independent Living community in the Washington, D.C., metro area.

The five participating finalists hailed from California, Delaware, Georgia, Massachusetts and Ontario, Canada. Their recipes combined local flavors and ingredients, while maintaining essential nutrients and great taste:

The winning chef, Floyd Stephen, was born in Belize and graduated from the chef training program at Los Angeles Trade Technical College. After working many years in California with notable chefs, such as Michel Richard, he moved to Atlanta in 2005 where he eventually worked under Wolfgang Puck. Chef Stephen has been with Sunrise for five years.

“We’ve always been proud to have Chef Stephen on our team at Brighton Gardens of Dunwoody, and even more so now that he is a Sunrise Signature Chef. Our residents look forward to his thoughtfully made meals every day,” said Niels Kaas, executive director of Brighton Gardens of Dunwoody.

The Sunrise Signature Dining program offers residents a high-quality selection of classic comfort food favorites, regional dishes, resident-suggested selections and healthy flavors from around the world. At Sunrise communities, residents enjoy meals prepared from scratch with local, fresh ingredients tailored to meet the unique nutritional needs of seniors.
