Sunrise Senior Living Chef Bob Brown Wins First Annual Senior Eats Nutritional Challenge

Chef Bob Brown of Sunrise ofNorwood, a Sunrise Senior Living community in Massachusetts, has been named this year's Sunrise Signature Chef and winner of the inaugural SeniorEats™ Nutritional Challenge. A panel of judges comprised of seniors who live at Sunrise chose Chef Brown as the winner for his creative and healthy recipe for Cod in Tarragon Tomato Broth, a low-calorie source of protein and a dish high in lycopene, a powerful antioxidant.

"Chef Brown wowed the resident judges with his ability to create a dish that not only delights the taste buds, but also provides high-quality nutrients and reduces fat and sodium," said Tim Whelan, vice president, Dining Services for Sunrise Senior Living. "The Sunrise Signature Dining program strives to constantly introduce tasty new dishes, while providing well-balanced options for our residents."

The SeniorEats™ Nutritional Challenge invited Sunrise chefs competing from senior living communities across the U.S. and Canada to develop healthy, creative and delicious recipes that incorporated Sunrise's high standards of proper nutrition for seniors. Finalists partaking in the challenge hailed from Arizona, Georgia,Massachusetts, Ohio and Ontario, Canada. The recipes from the finalists listed below combined local flavors and ingredients, while maintaining essential nutrients and great taste:

  • Bob Brown, Sunrise of Norwood (Mass.), Cod in Tarragon Tomato Sauce(Challenge Winner)
  • Eric Horner, Sunrise at Ivey Ridge (Ga.), Cornbread Crusted Trout with Black-eyed Peas and Tomato Concasse
  • Robert Kowalske, Sunrise at River Road (Ariz.), Arugula Quinoa Salmon Salad
  • Angela Nawrocki, Sunrise of Worthington (Ohio), Fettuccini with Walnut Cream Sauce
  • Robert Robertson, Sunrise of Oakville (Ontario, Canada), Halibut with Apple Slaw

Winning chef, Bob Brown, spent 20 years working as a carpenter before pursuing his dream of becoming a chef. He attended Johnson and Wales University in Rhode Island, cooked for five years at The Parker House in Boston, and joined Sunrise ofNorwood in 2007. "Cod is a great low-calorie protein choice and it's plentiful inMassachusetts. I love creating and serving healthy dishes like this to my residents; they're so friendly and wise, and it's a pleasure serving them every day," said Chef Brown.
